Easy Chicken Cordon Bleu

  • 2 boneless skinless chicken breasts, trimmed and pounded to 1/4 inch thickness
  • 1/4 to 1/2 cup All Purpose flour
  • 1 to 2 cups heavy whipping cream
  • 4 slices swiss cheese
  • 4 thin slices deli ham
  • 1/2 teaspoon paprika
  • salt or seasoned salt and pepper, to taste

Pre-heat your oven to 350. Grease a 9x9 oven safe dish.

Season chicken with salt and pepper, add paprika to your flour and mix. Dredge the chicken in flour, making sure both sides are covered.

Place two pieces of ham on the chicken, then 2 slices of swiss cheese. Roll up, so that all of the ham and cheese are inside of the chicken roll. Secure with toothpicks so that chicken doesn't unroll, if needed. Repeat with second piece of chicken.

Place chicken rolls in baking dish. Add heavy cream. You want the cream to almost cover the chicken. Feel free to spoon some cream over the tops of the chicken rolls.

Bake for 30 to 45 minutes on 350, or until a thermometer inserted into the chicken reads 165.

The combination of cheese, flour, and cream will create a sauce as the chicken bakes.

This makes 2 HUGE servings, or 4 small servings, if the chicken rolls are cut in half.

Serve with mashed potatoes and a green vegetable.
