Chicken and Yellow Rice


  • 2 boneless skinless chicken breasts, cut into cubes
  • 1/2 large onion, diced
  • 1/4- 1/2 cup frozen peas
  • 1 cup diced carrots
  • 2-3 garlic cloves, minced
  • 10 oz. package yellow rice
  • 1/4 tsp. paprika
  • 1/4 tsp. ground mustard
  • salt
  • pepper
Season chicken with salt, pepper, paprika, and ground mustard.

Sauté chicken in vegetable oil until cooked through. Add onion and chicken, cook until onions are translucent. Add garlic, stir for 1-2 minutes.

Add rice and water, cook according to package directions. Stir in frozen peas once rice is fully cooked.

Makes 4+ servings.
