Baked Mixed Vegetables


This is a super easy veggie side dish. If you love squash and zucchini and don't mind the texture you can just peel and dice them. I prefer to scrape out the insides (seeds, etc) so that you only get the firm texture of the vegetables since the inside bits squishy. Try to dice all of your vegetables the same size, about 1 inch.
  • 2 zucchini, peeled, scraped inside, and diced into 
  • 2 squash, peeled, scraped inside, and diced 
  • 3 carrots, peeled and diced
  • 1 small onion, diced 
  • 2 Tablespoons olive oil
  • Seasoned salt and pepper, to taste
Oil or spray a baking dish, 8x8 or 9x9 should work. Pre-heat oven to 350 degrees.

Combine all ingredients, make sure everything is lightly coated with oil, salt, and pepper. Pour everything into the baking dish. 

Bake on 350 for 20-30 minutes, or until the veggies are soft and starting to brown around the edges. 

This is great as a side with either teriyaki sauce for dipping, or parmesan sprinkled on top.
