Sweet and Sour Cake

  • 1 box lemon cake mix
  • 3/4 cup vegetable oil
  • 4 eggs, separated
  • 1 small box lime jello
  • 3/4 cup apricot nectar, found in the "ethnic" section or near the Mexican food
  • 3 Tbsp. lemon flavoring

Preheat oven to 350 degrees. Beat egg whites until stiff peaks form. Mix together all cake ingredients except egg whites, then fold egg whites into mixture gently. Pour batter into greased and floured bundt pan. Bake for 50 minutes. Combine glaze ingredients in a sauce pan. Bring just to a boil after the butter has melted. Turn heat down to low and allow to simmer for 2-3 minutes. While cake is still warm, turn out onto a plate. Use a skewer or toothpick to poke holes into the cake. Pour glaze over the cake slowly, allowing some to pool in the center.
