Smokey honey buffalo chicken mac and cheese

 
I'm a good cook, a great cook even. I'm not very good at following recipes. I'm even worse at writing recipes. But I'm trying. 

Ingredients:

For the macaroni:

One package of rotini, prepared according to package directions
4 oz. cream cheese
8 oz shredded cheddar
4 Tbsp. butter
1/2 tsp. ground mustard
1/2 tsp. smoked paprika
salt and pepper
Half n half

For the chicken:

One pound of boneless skinless chicken breast or thigh cut into bite sized (1 inch) pieces
2 Tbsp. cooking oil or some cooking spray
Lawry's pollo asado seasoning
Pepper
1/4 cup hot sauce
4 Tbsp. butter
1-2 Tbsp. honey

Combine hot noodles with all macaroni ingredients over medium low heat. Stir as occasionally as ingredients melt to combine. Add splashes of half n half as needed to help the cheese form a sauce.

Pre-heat a skillet over medium high heat while you season chicken. Add oil to pan. Add chicken to pan and sear. Once it starts to brown turn over the chicken pieces. Once all of the chicken is browned add hot sauce, butter, and honey. Turn heat down to low. Simmer until chicken reaches 165 internally. Add more hot sauce or honey to taste. 

Serve chicken and sauce on top of the mac and cheese.
