Non-Dairy Banana Ice Cream
- 2 cans full fat coconut milk
- 2 cans reduced fat coconut milk
- 1 small container of non-dairy whipped topping
- Coconut almond milk or soy milk
- 1/2 to 1 cup of sugar
- 1 vanilla bean, scraped
- 2 tsp vanilla flavoring
- 3-4 bananas, smashed
Makes 1 gallon of ice cream.
Put coconut milk, sugar, and vanilla bean in a sauce pan and cook on medium until everything is heated through. If the mixture isn't sweet enough add additional sugar to taste. Remove vanilla bean pod.
Add coconut milk mixture and remaining ingredients in ice cream machine and stir together. Add just enough "milk" to finish filling the container. Put lid on machine. Cover with ice and rock salt and churn according to the machines directions.
